No Bake cookies are the best!
And everyone seems to have "their" recipe, even though they all look and taste basically the same. I received my recipe from my mother decades ago, when I first started baking.
Time: 1/2 hr
Difficulty: easy
3 Tbs unsweetened cocoa powder
1/2 cup butter
1/2 cup milk
a pinch of salt
3/4 cup peanut butter
3 to 4 cups quick oats (I like to use regular oats, makes them chewier!)
1 tsp vanilla extract
Remove from heat and add the peanut butter and vanilla.
Once the peanut butter has melted, gradually add the oats.
Mix all ingredients well.
Drop by the spoonful onto wax paper.
Let cool to set.
Enjoy your cookies!

Ingredients
2 cups sugar3 Tbs unsweetened cocoa powder
1/2 cup butter
1/2 cup milk
a pinch of salt
3/4 cup peanut butter
3 to 4 cups quick oats (I like to use regular oats, makes them chewier!)
1 tsp vanilla extract
Steps
In a medium saucepan, bring the first 5 ingredients to a boil. (OR: mix in a microwave safe bowl and zap for 2-3 minutes)Remove from heat and add the peanut butter and vanilla.
Once the peanut butter has melted, gradually add the oats.
Mix all ingredients well.
Drop by the spoonful onto wax paper.
Let cool to set.

Notes
I like to make these anytime I am longing for Fall and cooler weather. They always have a "Fall feel" to me. Adjust the peanut butter and oats to your taste, I "eyeball" the oats after I mix in the first 3 cups.
